There’s something about autumn that changes the way we think about baking.

Warm spices come back into the kitchen. Pumpkin, apple, caramel, chocolate and butter suddenly feel a little more irresistible. The aromas coming from the oven remind us of gatherings, holidays, family traditions and desserts we’ve looked forward to year after year.

Here in Scottsdale, Arizona, autumn may not arrive with falling leaves and chilly mornings, but at Lucille’s Baked Goods, we can still taste the season.

And that’s exactly what inspired Autumn at Lucille’s.

This year, I wanted to create a small collection of seasonal cookies that captured different sides of autumn, not simply put pumpkin in everything and call it fall.

The result is four cookies: Pumpkin Chocolate Chip, Apple Pie Spice, Butter Crunch and Salted Chocolate Caramel.

But getting to those four took a little time in the kitchen.

What Makes a Cookie Feel Like Autumn?

When I started thinking about this collection, I asked myself a simple question:

What does autumn taste like?

For me, it isn’t just pumpkin.

It’s warm spice and apples. It’s rich butter, caramel and chocolate. It’s the smell of something baking in the oven and those comforting flavors that make you want to pour a cup of coffee and sit down with something freshly baked.

There’s nostalgia to autumn baking, too.

Apple pie can remind you of family gatherings. Pumpkin signals that a new season has arrived. Caramel and chocolate bring that richness we begin craving as summer winds down.

I wanted to capture all of that without creating four cookies that tasted too much alike.

Each one needed to bring something different to the box.

How a Flavor Makes the Cut

Creating Autumn at Lucille’s wasn’t about seeing how many seasonal flavors I could put on the menu.

Every cookie had to earn its place.

When I develop a new flavor, taste comes first. But I’m also paying attention to texture, balance, appearance and how the cookie actually bakes.

Sometimes an idea sounds wonderful and the finished cookie simply isn’t what I imagined.

Sometimes it tastes good, but something is missing.

And sometimes I have to start again.

That’s part of the process.

I wanted this collection to feel carefully chosen rather than crowded. Every flavor needed its own personality, but when all four were together, they still needed to feel like Autumn at Lucille’s.

Salted Chocolate Caramel: Sometimes the First Batch Isn’t the One

Salted Chocolate Caramel is probably the best example of why I don’t stop just because something tastes good.

I actually made two different versions of this cookie.

The first version tasted great. I loved the combination of chocolate, caramel and salt, so the flavor was there.

But the cookie spread much more than I wanted while it was baking. It came out flatter than I had envisioned, and when I looked at it, I knew it wasn’t what I wanted representing Lucille’s.

Could I have sold it?

Probably.

Did it taste good?

Absolutely.

But it wasn’t the cookie I had pictured.

And “good enough” wasn’t what I was looking for.

So I tried again.

The second version came out of the oven and that was it.

It had the chocolate-caramel flavor I loved, but this time it also had the look, texture and substance I wanted.

That’s when Salted Chocolate Caramel officially made the cut.

Apple Pie Spice: When Different Turns Out to Be Better

Then there was Apple Pie Spice, which surprised me for a completely different reason.

I decided to use fresh Granny Smith apples, and they took this cookie over the top.

The tartness of the fresh apples against the sweetness and warm spices gave the cookie wonderful flavor and texture. Add the vanilla glaze, and everything came together.

But there was one difference.

The fresh apples make Apple Pie Spice a softer cookie than I usually bake at Lucille’s.

Initially, that wasn’t necessarily what I expected. Most of my cookies have a different texture, and I could have kept changing the recipe to make this one more like the others.

But then I tasted it.

It was fabulous.

And I realized that the softer texture wasn’t something I needed to fix. It was part of what made this particular cookie so good.

That’s one of the things I love about developing new flavors. Sometimes I’m very clear about what I want and keep working until I get there, as I did with Salted Chocolate Caramel.

Other times, an ingredient changes the cookie in an unexpected way and the result is even better.

The fresh Granny Smith apples did exactly that for Apple Pie Spice.

After all the baking, tasting and deciding, four cookies made the final collection.

I could have kept going.

There are plenty of flavors associated with fall, and I could easily have created a much larger seasonal menu.

But more isn’t always better.
